From Retail to Wine Lounge: The Transformation of Cellar & Scholar

 

When we first walked into what is now Cellar & Scholar Wine Lounge and Retail Shop, it was hard to imagine the cozy, inviting wine haven it would quickly become. Previously a retail space, this project wasn’t just about installing equipment—it was about transforming the bones of one type of business into a fully functional kitchen and wine lounge that could support a tapas-style menu and a curated retail experience.

Our own Larry Phelps of SRE walks us through his experience as the assigned project manager, starting with the inital conceptualization the lounge owners were going for, and explaining how our SRE installation team overcame each hurdle we ran into along the way. 

 

The Vision

Cathy and Justine had a clear vision: a wine bar focused on exceptional wine service, paired with a small, thoughtful tapas-style menu, and a retail space to share their passion for great wine. The kitchen needed to fit into a modest 10 x 12’ footprint while still supporting everything from cheese and charcuterie boards to freshly baked shortbread cookies.

The Challenges

No project comes without its challenges, and Cellar & Scholar had its fair share:

  1. Space Limitations: A compact kitchen footprint meant every piece of equipment had to earn its place.
  2. Plumbing Adjustments: Adding a mop sink and accommodating plumbing for multiple sinks (handwashing, prep, and three-compartment) required creative problem-solving to minimize costly restructuring.
  3. Electrical Requirements: Ensuring adequate power for key equipment, including a Combi Oven, while balancing existing infrastructure was no small task.
  4. Grease Interceptor Placement: Initially planned for an above-floor location, we had to revisit placement and sizing to improve kitchen workflow and avoid space congestion.
  5. Special Orders & Timelines: Some key equipment pieces were special orders, and coordinating deliveries around construction timelines was a logistical puzzle.
  6. Ventilation Constraints: A traditional vent hood was not an option for the space or the budget, which meant we had to find alternative solutions to meet both code requirements and operational needs.

The Solutions

Each challenge was met with collaboration, flexibility, and communication:

  • Efficient Layout Design: We worked closely with Cathy, Justine, and contractor Geoff with KellCraft, to ensure the layout made the most of every inch of space.
  • Plumbing Coordination: Instead of forcing decisions on sink placements, we leaned on the plumber’s expertise to minimize disruption and cost.
  • Smart Equipment Choices: We incorporated a mix of new and demo units (like the Combi Oven) to balance quality and budget.
  • Clear Communication: Regular updates with Cathy and Justine, along with quick pivots when new information came in, kept the project on track.
  • Ventilation Workaround: Instead of a traditional vent hood, we selected a ventless Combi Oven with a built-in condensation hood, allowing the team to prepare a variety of menu items safely and efficiently without requiring extensive ventilation modifications.
  • Flexibility in Equipment: From swapping out drains to adjusting shelving post sizes, we found ways to streamline orders and reduce delays.

The Results

Today, Cellar & Scholar Wine Lounge and Retail Shop is a welcoming space that brings Cathy and Justine’s vision to life. Behind the scenes, the kitchen runs efficiently, supporting everything from event hosting to daily service.

But it’s more than just a functional space—it’s an oasis. Justine envisioned a place where people could come to unwind, relax, and simply breathe. From the thoughtfully designed menu to the warm, inviting ambiance, every detail was crafted to create a sense of calm and connection in the middle of a busy world.

More than just another project, this was a true collaboration—one built on shared goals, open communication, and a commitment to getting things right.

A Toast to the Future

It’s been a joy to see this transformation from retail space to a warm, vibrant wine lounge. We’re proud to have been part of this journey and can’t wait to see Cellar & Scholar continue to thrive.
